- 2 lbs boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced (about 2 tablespoons)
- 1 cup heavy cream
- ½ cup chicken broth
- ⅓ cup sun-dried tomatoes packed in oil, drained and chopped
- ½ cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (adjust to taste)
- ¼ cup fresh basil, chopped, plus more for garnish
- 12 slider buns (preferably brioche or Hawaiian sweet rolls)
- 1 cup shredded mozzarella cheese
- 2 tablespoons melted butter mixed with ½ teaspoon garlic powder for brushing
Instructions
- Preheat oven to 375°F. Season chicken with salt and pepper, then cook in olive oil over medium-high heat for 5-6 minutes per side until cooked through. Set aside to rest.
- In the same skillet, melt butter and sauté garlic for 30 seconds until fragrant. Add chicken broth and scrape up browned bits from pan.
- Add heavy cream, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Simmer for 5-7 minutes until slightly thickened. Stir in Parmesan until melted, then remove from heat and add fresh basil.
- Shred or chop the chicken and return to the skillet, tossing to coat in sauce. Let sit for 2 minutes to absorb flavors.
- Slice slider buns horizontally while keeping them connected. Place bottom half in a 9×13-inch baking dish. Spread some sauce on bottom buns, add chicken mixture, and sprinkle with mozzarella. Top with remaining buns.
- Brush tops with garlic butter mixture. Cover with foil and bake for 10 minutes, then uncover and bake 5-7 minutes more until golden.
- Let cool for 5 minutes before serving. Garnish with additional fresh basil if desired.
