- 4 salmon fillets (6 oz/170g each), skin-on, preferably center-cut
- 3 tablespoons (45ml) pure maple syrup (not pancake syrup)
- 2 tablespoons (30g) Dijon mustard
- 1 tablespoon (15ml) low-sodium soy sauce
- 1 clove garlic, minced (about 1 teaspoon)
- 1 teaspoon fresh lemon zest
- 1 tablespoon (15ml) fresh lemon juice
- 2 tablespoons (30ml) olive oil, divided
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon salt
- 2 tablespoons fresh chopped parsley or dill for garnish
- Lemon wedges for serving
Instructions
- Step 1: Prepare the salmon and preheat the oven Remove the salmon fillets from refrigeration and pat them completely dry with paper towels. Let them rest at room temperature for 15-20 minutes while you preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup, then brush it lightly with 1 tablespoon of olive oil.
- Step 2: Create the maple Dijon glaze In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, minced garlic, lemon zest, lemon juice, remaining tablespoon of olive oil, salt, and pepper until smoothly combined. The mixture should be thick enough to coat the back of a spoon but still pourable. If it seems too thick, add a teaspoon of water to adjust the consistency.
- Step 3: Season and arrange the salmon Place the salmon fillets skin-side down on the prepared baking sheet, spacing them evenly apart. Season the tops lightly with additional salt and pepper. For even cooking, position the thicker portions toward the outside edges of the baking sheet.
