Ingredients

  • 2 cups white long-grain rice, uncooked
  • pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 cans (10.5 oz each) cream of chicken soup
  • 2½ cups chicken broth
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup butter, melted
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup frozen peas and carrots (optional)

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking dish with butter or cooking spray.
  2. In a large bowl, combine uncooked rice, chicken pieces, cream of chicken soup, and chicken broth, stirring until well mixed.
  3. Add diced onion, minced garlic, melted butter, dried thyme, parsley, salt, pepper, and optional frozen vegetables. Mix thoroughly.
  4. Pour mixture into prepared baking dish, spreading evenly. Cover tightly with aluminum foil.
  5. Bake covered for 45 minutes, then remove foil and continue baking for 15-20 minutes until top is slightly golden.
  6. Let casserole rest for 10 minutes before serving to allow it to set properly.
