- 2 cups white long-grain rice, uncooked
- 1½ pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 cans (10.5 oz each) cream of chicken soup
- 2½ cups chicken broth
- 1 medium onion, finely diced
- 2 cloves garlic, minced
- ½ cup butter, melted
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- 1 teaspoon salt
- 1 cup frozen peas and carrots (optional)
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking dish with butter or cooking spray.
- In a large bowl, combine uncooked rice, chicken pieces, cream of chicken soup, and chicken broth, stirring until well mixed.
- Add diced onion, minced garlic, melted butter, dried thyme, parsley, salt, pepper, and optional frozen vegetables. Mix thoroughly.
- Pour mixture into prepared baking dish, spreading evenly. Cover tightly with aluminum foil.
- Bake covered for 45 minutes, then remove foil and continue baking for 15-20 minutes until top is slightly golden.
- Let casserole rest for 10 minutes before serving to allow it to set properly.
