  • 1 cup (100g) Parmesan cheese, freshly grated
  • 3/4 cup (90g) panko breadcrumbs
  • 2 tablespoons (6g) fresh parsley, finely chopped
  • 2 teaspoons (4g) lemon zest (from approximately 1 large lemon)
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 large eggs
  • 2 tablespoons (30ml) lemon juice
  • 2 tablespoons (30ml) olive oil
  • Cooking spray

Instructions

  1. Step 1: Prepare the Chicken Pat the chicken tenderloins dry with paper towels to remove excess moisture. If using chicken breasts instead, slice them into 1-inch strips. For extra tenderness, lightly pound the chicken to an even thickness using a meat mallet. Season both sides of the chicken with a pinch of salt and pepper.
  2. Step 2: Create the Flavor Base In a shallow bowl, whisk together the eggs, lemon juice, half of the minced garlic, and 1 tablespoon of olive oil until well combined. This mixture not only helps the coating adhere but also infuses the chicken with the first layer of flavor.
  3. Step 3: Prepare the Coating Mixture In a separate shallow dish, combine the panko breadcrumbs, grated Parmesan cheese, lemon zest, remaining garlic, dried oregano, paprika, salt, pepper, and chopped parsley. Mix thoroughly with your fingers to ensure the lemon zest and garlic are evenly distributed throughout the mixture.
  4. Step 4: Dredge the Chicken Working with one piece at a time, dip the chicken first in the egg mixture, allowing excess to drip off.
