1.5 pounds (680g) boneless, skinless chicken thighs
1.5 cups (300g) orzo pasta
2 medium lemons (zest and juice)
3.5 cups (830ml) chicken broth
2 cups (60g) fresh baby spinach
4 cloves garlic, minced
1/2 cup (75g) crumbled feta cheese
Instructions
- Season and sear chicken thighs until golden and cooked through.
- Sauté onions and garlic in the same pan, then toast orzo for 1-2 minutes.
- Add broth and lemon juice, simmer covered for 8-10 minutes until orzo is tender.
- Slice chicken, return to pan with accumulated juices.
- Stir in spinach, fresh herbs, and remaining lemon zest and juice.
- Let stand 3-5 minutes, then serve topped with crumbled feta cheese.
- Garnish with extra lemon wedges and black pepper.
