- 2 lbs (900g) boneless, skinless chicken breasts
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- 2 cups (500ml) marinara sauce
- 2 cups (8 oz/225g) shredded mozzarella cheese
- ½ cup (2 oz/55g) grated Parmesan cheese
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup fresh basil leaves, roughly chopped (plus extra for garnish)
- ¼ tsp red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
- Pound chicken breasts to ½-inch thickness and season both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat. Cook garlic for 30 seconds, then sear chicken for 2 minutes per side.
- Spread ½ cup marinara sauce in baking dish. Arrange chicken over sauce and pour remaining sauce over chicken.
- Cover with foil and bake for 15 minutes.
- Remove foil, add half the mozzarella, and bake uncovered for 10 more minutes.
- Mix remaining mozzarella with Parmesan and red pepper flakes. Sprinkle over chicken and bake 5-10 minutes until cheese is bubbly and chicken reaches 165°F.
- Let rest 5 minutes before serving. Garnish with fresh basil.
