Keto Fried Sausage & Cabbage

Ingredients

  • 1 lb (450g) smoked sausage or kielbasa, sliced into ¼-inch rounds
  • 1 medium head green cabbage (about 2 lbs/900g), cored and chopped into 1-inch pieces
  • 3 tablespoons (45ml) butter, divided
  • 1 medium yellow onion (about 1 cup/160g), thinly sliced
  • 4 cloves garlic, minced (about 4 teaspoons)
  • 1 teaspoon caraway seeds (optional but recommended)
  • 1 tablespoon (15ml) apple cider vinegar
  • ½ teaspoon red pepper flakes (adjust to taste
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Heat a large skillet over medium-high heat. Add 1 tablespoon butter and brown sausage slices for 2-3 minutes per side until caramelized. Transfer to a plate.
  2. In the same skillet, add another tablespoon of butter. Cook sliced onions with a pinch of salt for 3-4 minutes until translucent. Add garlic and caraway seeds and cook for 30 seconds until fragrant.
  3. Add remaining tablespoon of butter and chopped cabbage. Season with salt, pepper, and red pepper flakes. Cook for 8-10 minutes, stirring occasionally, allowing cabbage to caramelize between stirs.
  4. Return browned sausage to the skillet. Add apple cider vinegar and toss everything together. Cook 2-3 minutes more to allow flavors to meld.
  5. Taste and adjust seasoning as needed. Remove from heat and sprinkle with fresh parsley before serving.
