- 1 lb (450g) smoked sausage or kielbasa, sliced into ¼-inch rounds
- 1 medium head green cabbage (about 2 lbs/900g), cored and chopped into 1-inch pieces
- 3 tablespoons (45ml) butter, divided
- 1 medium yellow onion (about 1 cup/160g), thinly sliced
- 4 cloves garlic, minced (about 4 teaspoons)
- 1 teaspoon caraway seeds (optional but recommended)
- 1 tablespoon (15ml) apple cider vinegar
- ½ teaspoon red pepper flakes (adjust to taste
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Heat a large skillet over medium-high heat. Add 1 tablespoon butter and brown sausage slices for 2-3 minutes per side until caramelized. Transfer to a plate.
- In the same skillet, add another tablespoon of butter. Cook sliced onions with a pinch of salt for 3-4 minutes until translucent. Add garlic and caraway seeds and cook for 30 seconds until fragrant.
- Add remaining tablespoon of butter and chopped cabbage. Season with salt, pepper, and red pepper flakes. Cook for 8-10 minutes, stirring occasionally, allowing cabbage to caramelize between stirs.
- Return browned sausage to the skillet. Add apple cider vinegar and toss everything together. Cook 2-3 minutes more to allow flavors to meld.
- Taste and adjust seasoning as needed. Remove from heat and sprinkle with fresh parsley before serving.
