  • 2 tablespoons olive oil
  • 1 large red bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 23 fresh jalapenos, sliced (adjust to your preferred spice level)
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • 1 tablespoon lime juice (optional for extra freshness)

Instructions

  1. Prepare the Chicken: Season the chicken breasts or thighs with salt, pepper, cumin, paprika, and chili powder. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Cook the Chicken: Once the pan is hot, add the chicken and sear on each side for 4-5 minutes, or until golden brown and cooked through. Remove the chicken from the pan and set aside.
  3. Sauté the Vegetables: In the same pan, add the remaining tablespoon of olive oil. Sauté the sliced bell peppers, jalapenos, onions, and garlic for about 5-6 minutes, until they soften and become fragrant.
  4. Combine the Chicken and Peppers: Slice the cooked chicken into strips and return it to the pan with the peppers. Toss everything together and cook for an additional 2-3 minutes to combine the flavors.
  5. Serve: Garnish with fresh cilantro and a squeeze of lime juice if desired. Serve immediately with rice, tortillas, or your favorite side dishes.
