- 2 chicken breasts or thighs, boneless and skinless
- 2 tablespoons olive oil
- 1 large red bell pepper, sliced
- 1 large green bell pepper, sliced
- 2–3 fresh jalapenos, sliced (adjust to your preferred spice level)
- 1 medium onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- 1 tablespoon lime juice (optional for extra freshness)
Instructions
- Prepare the Chicken: Season the chicken breasts or thighs with salt, pepper, cumin, paprika, and chili powder. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
- Cook the Chicken: Once the pan is hot, add the chicken and sear on each side for 4-5 minutes, or until golden brown and cooked through. Remove the chicken from the pan and set aside.
- Sauté the Vegetables: In the same pan, add the remaining tablespoon of olive oil. Sauté the sliced bell peppers, jalapenos, onions, and garlic for about 5-6 minutes, until they soften and become fragrant.
- Combine the Chicken and Peppers: Slice the cooked chicken into strips and return it to the pan with the peppers. Toss everything together and cook for an additional 2-3 minutes to combine the flavors.
- Serve: Garnish with fresh cilantro and a squeeze of lime juice if desired. Serve immediately with rice, tortillas, or your favorite side dishes.
