- 1 pound ground Italian sausage ((mild or spicy))
- 3 large carrots ((peeled and chopped))
- 2 ribs celery ((finely chopped))
- 1 medium onion ((finely chopped))
- 1 red bell pepper ((finely chopped))
- 4 cloves garlic ((finely minced))
- 1½ teaspoons Italian seasoning
- 1½ teaspoons salt
- 7 cups low-sodium chicken broth
- 1½ cups dry ditalini pasta
- 1 cup fresh, chopped spinach
- Freshly grated Parmesan cheese (optional)
Instructions
- Step 1: In a large soup pot or Dutch oven, cook and stir the sausage, carrots, celery, onion, and bell pepper over medium-high heat, until the sausage is browned and the onion is translucent, about 5 minutes.
- Step 2: Stir in the garlic, Italian seasoning, and salt and cook for 1 minute.
- Step 3: Add the broth and use a wooden spoon to scrape the bottom of the pot well to remove any stuck-on bits.
- Step 4: Bring to a simmer, then reduce the heat to medium-low, cover, and cook for 10 minutes, or until the vegetables are nearly tender, stirring occasionally.
- Step 5: Stir in the pasta, cover, and continue cooking about 10 minutes, stirring often, until the pasta is cooked to al dente.
- Step 6: Stir in the spinach. Taste and adjust seasonings as desired. Sprinkle with Parmesan if desired and serve.
