- 2 lbs boneless, skinless chicken thighs
- 1/2 cup honey
- 6 cloves garlic, minced
- 1/3 cup low-sodium soy sauce
- 1/4 cup chicken broth
- 2 tablespoons tomato paste
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon red pepper flakes
- 2 tablespoons cornstarch
- 2 tablespoons cold water
- 2 green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a bowl, whisk together honey, minced garlic, soy sauce, chicken broth, tomato paste, rice vinegar, sesame oil, and red pepper flakes until well combined.
- Pat chicken thighs dry with paper towels and lightly season with salt and pepper.
- Set Instant Pot to ‘Sauté’ and add 1 tablespoon of oil. Brown chicken in batches for 2 minutes per side until golden.
- Cancel ‘Sauté’ function. Return all chicken to the pot and pour the honey garlic sauce over it.
- Close lid, set valve to ‘Sealing’, and pressure cook on ‘High’ for 8 minutes.
- Perform a quick release when done. Remove chicken to a plate.
- Switch to ‘Sauté’ function. Mix cornstarch and cold water in a small bowl, then slowly pour into the simmering sauce while stirring constantly.
- Cook for 2-3 minutes until sauce thickens to a glossy consistency.
- Return chicken to pot and toss to coat with the sauce.
- Garnish with sliced green onions and sesame seeds before serving.
