Instant Pot Honey Garlic Chicken

Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup honey
  • 6 cloves garlic, minced
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup chicken broth
  • 2 tablespoons tomato paste
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 2 green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a bowl, whisk together honey, minced garlic, soy sauce, chicken broth, tomato paste, rice vinegar, sesame oil, and red pepper flakes until well combined.
  2. Pat chicken thighs dry with paper towels and lightly season with salt and pepper.
  3. Set Instant Pot to ‘Sauté’ and add 1 tablespoon of oil. Brown chicken in batches for 2 minutes per side until golden.
  4. Cancel ‘Sauté’ function. Return all chicken to the pot and pour the honey garlic sauce over it.
  5. Close lid, set valve to ‘Sealing’, and pressure cook on ‘High’ for 8 minutes.
  6. Perform a quick release when done. Remove chicken to a plate.
  7. Switch to ‘Sauté’ function. Mix cornstarch and cold water in a small bowl, then slowly pour into the simmering sauce while stirring constantly.
  8. Cook for 2-3 minutes until sauce thickens to a glossy consistency.
  9. Return chicken to pot and toss to coat with the sauce.
  10. Garnish with sliced green onions and sesame seeds before serving.
