Hot Honey Salmon Bites

Ingredients

  • pounds fresh salmon, skin removed and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ⅓ cup honey
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 12 teaspoons red pepper flakes
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons cornstarch (optional)
  • 1 tablespoon water (if using cornstarch)

Instructions

  1. Pat salmon cubes dry with paper towels. In a medium bowl, toss salmon with olive oil, salt, pepper, garlic powder, and paprika. Let rest 5-10 minutes at room temperature.
  2. Make the glaze by melting butter in a small saucepan over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Add honey, red pepper flakes, and soy sauce. Simmer 2-3 minutes until slightly thickened. Remove from heat and stir in lemon juice. For a thicker glaze, mix cornstarch with water and whisk into hot mixture.
  3. Heat a large non-stick skillet over medium-high heat. Cook salmon in batches (don’t overcrowd) for 2 minutes without disturbing, then flip and cook 1-2 minutes more until just cooked through with golden crust.
  4. Return all salmon to the pan over low heat. Pour hot honey glaze over salmon and gently toss to coat. Simmer 30 seconds.
  5. Serve immediately, garnished with sliced green onions or sesame seeds if desired.
