- 1½ pounds fresh salmon, skin removed and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ⅓ cup honey
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1–2 teaspoons red pepper flakes
- 1 tablespoon soy sauce
- 1 tablespoon fresh lemon juice
- 2 teaspoons cornstarch (optional)
- 1 tablespoon water (if using cornstarch)
Instructions
- Pat salmon cubes dry with paper towels. In a medium bowl, toss salmon with olive oil, salt, pepper, garlic powder, and paprika. Let rest 5-10 minutes at room temperature.
- Make the glaze by melting butter in a small saucepan over medium heat. Add minced garlic and cook until fragrant, about 30 seconds. Add honey, red pepper flakes, and soy sauce. Simmer 2-3 minutes until slightly thickened. Remove from heat and stir in lemon juice. For a thicker glaze, mix cornstarch with water and whisk into hot mixture.
- Heat a large non-stick skillet over medium-high heat. Cook salmon in batches (don’t overcrowd) for 2 minutes without disturbing, then flip and cook 1-2 minutes more until just cooked through with golden crust.
- Return all salmon to the pan over low heat. Pour hot honey glaze over salmon and gently toss to coat. Simmer 30 seconds.
- Serve immediately, garnished with sliced green onions or sesame seeds if desired.
