Hot Honey Feta Chicken Dish

Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds or 900g)
  • 1/2 cup (120ml) honey
  • 23 tablespoons hot sauce (Frank’s RedHot or Sriracha)
  • 1 tablespoon red pepper flakes
  • 1 tablespoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 8 oz (225g) feta cheese, crumbled
  • 2 tablespoons fresh thyme leaves
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons chopped fresh parsley for garnish (optional)

Instructions

  1. Place chicken breasts between plastic wrap and pound to 1/2 inch thickness. Season with salt, pepper, garlic powder, and smoked paprika. Let rest at room temperature for 10-15 minutes.
  2. In a small saucepan over medium-low heat, combine honey, hot sauce, and red pepper flakes. Warm gently for 2-3 minutes until well combined. Do not boil. Set aside.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes on first side until golden brown.
  4. Flip chicken and cook for another 4-5 minutes until internal temperature reaches 160°F (71°C).
  5. Pour two-thirds of the hot honey mixture over the chicken. Lower heat to medium and cook for 1-2 minutes more, turning to coat all sides, until chicken reaches 165°F (74°C).
  6. Sprinkle half the feta cheese over the chicken in the skillet. Remove from heat and let rest for 5 minutes.
  7. Transfer to a serving platter, drizzle with remaining hot honey, and sprinkle with remaining feta cheese.
  8. Finish with fresh thyme leaves and optional parsley before serving.
