Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Prepare the Wet Ingredients: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 2-3 minutes using an electric mixer. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. Mix the Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  4. Add the Chocolate Chips and Marshmallows: Gently fold in the chocolate chips and mini marshmallows using a spatula, making sure they are evenly distributed throughout the dough.
  5. Shape the Cookies: Use a tablespoon or a cookie scoop to portion out the dough into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
  6. Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. The cookies will firm up as they cool.
