Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
- Prepare the Wet Ingredients: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 2-3 minutes using an electric mixer. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Mix the Dry Ingredients: In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Add the Chocolate Chips and Marshmallows: Gently fold in the chocolate chips and mini marshmallows using a spatula, making sure they are evenly distributed throughout the dough.
- Shape the Cookies: Use a tablespoon or a cookie scoop to portion out the dough into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
- Bake: Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. The cookies will firm up as they cool.
- Cool the Cookies: Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire cooling rack to cool completely.
