- 1½ pounds (680g) boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 2 tablespoons (30ml) vegetable oil
- 4 cloves garlic, minced (about 1½ tablespoons)
- ⅓ cup (80ml) honey
- ¼ cup (60ml) low-sodium soy sauce
- 1 tablespoon (15ml) rice vinegar or apple cider vinegar
- 1 tablespoon (15g) cornstarch
- 2 tablespoons (30ml) water
- ½ teaspoon red pepper flakes (optional)
- 2 green onions, thinly sliced (for garnish)
- 1 teaspoon sesame seeds (for garnish)
- Salt and pepper to taste
Instructions
- Pat chicken pieces dry and season with salt and pepper. In a small bowl, mix honey, soy sauce, and vinegar. In another bowl, combine cornstarch and water to make a slurry.
- Heat oil in a large skillet over medium-high heat. Add chicken in a single layer and cook undisturbed for 3-4 minutes until golden. Flip and cook another 3 minutes until nearly cooked through. Remove to a plate.
- Reduce heat to medium. Add garlic and red pepper flakes (if using) to the pan, stirring for 30 seconds until fragrant. Pour in the honey-soy mixture and bring to a simmer, scraping up any browned bits.
- Whisk in the cornstarch slurry and simmer for 1-2 minutes until the sauce thickens. Return chicken to the pan with any juices and toss to coat. Simmer for 1-2 more minutes until chicken is cooked through.
- Remove from heat, garnish with green onions and sesame seeds, and serve immediately over rice or with your favorite sides.
