Honey Garlic Chicken Bites

Ingredients

  • pounds (680g) boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • ½ cup (60g) all-purpose flour
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons vegetable oil for frying
  • ⅓ cup (80ml) honey
  • 4 cloves garlic, minced (about 2 tablespoons)
  • ¼ cup (60ml) low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 tablespoon ketchup
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 tablespoon sesame seeds
  • 2 green onions, thinly sliced

Instructions

  1. Pat chicken pieces dry with paper towels. In a medium bowl, combine flour, cornstarch, garlic powder, salt, and pepper.
  2. Toss chicken pieces in the flour mixture until completely coated, shaking off excess.
  3. Heat vegetable oil in a large skillet over medium-high heat. Cook chicken in batches for 3-4 minutes per side until golden and cooked through (165°F/74°C internal temperature).
  4. Transfer cooked chicken to a paper towel-lined plate to drain.
  5. In the same skillet (remove excess oil), sauté minced garlic for 30 seconds until fragrant.
  6. Add honey, soy sauce, rice vinegar, brown sugar, ketchup, and sesame oil. Bring to a gentle simmer for 2 minutes.
  7. Stir the cornstarch slurry and pour into the sauce, stirring constantly until thickened (1-2 minutes).
  8. Return chicken to the skillet and toss to coat evenly in the sauce. Simmer together for 1 minute.
  9. Transfer to a serving dish and sprinkle with sesame seeds and sliced green onions.
  10. Serve immediately while hot and sticky.
