  • pounds (680g) boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • 1 pound (450g) fresh green beans, trimmed and cut in half
  • ¼ cup (60ml) honey
  • 5 cloves garlic, minced (about 2 tablespoons)
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons olive oil, divided
  • 1 tablespoon cornstarch
  • ¼ cup (60ml) water
  • ½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 green onions, thinly sliced for garnish
  • 1 tablespoon sesame seeds for garnish

Instructions

  1. In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, cornstarch, water, and red pepper flakes (if using) until smooth. Set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook for 2-3 minutes per side until golden and cooked through. Transfer to a plate.
  3. In the same pan, add remaining tablespoon of olive oil and green beans. Cook for 4-5 minutes until crisp-tender.
  4. Return chicken to the pan with green beans. Pour the sauce over everything and stir to coat.
  5. Bring to a simmer and cook for 2-3 minutes until sauce thickens and becomes glossy.
  6. Remove from heat and garnish with sliced green onions and sesame seeds.
  7. Serve immediately over rice or noodles if desired.
