Skip the boring chicken dinners! This Honey Dijon Chicken is juicy on the inside, caramelized on the outside, and slathered with a sauce so good you’ll want to drink it straight.

- 4 boneless, skinless chicken breasts (about 2 pounds total)
- 1/3 cup honey
- 1/4 cup Dijon mustard
- 2 tablespoons olive oil
- 3 cloves garlic, minced (about 1 tablespoon)
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon butter (optional, for richer sauce)
- Fresh parsley, chopped (for garnish)
Instructions
- Pat chicken breasts dry with paper towels. If needed, pound to an even 3/4-inch thickness between plastic wrap. Season both sides with salt and pepper.
- Whisk together honey, Dijon mustard, garlic, lemon juice, and thyme in a bowl. Reserve 1/3 of this mixture separately for basting.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken until golden brown, about 2-3 minutes per side.
- Pour the honey Dijon mixture (not the reserved portion) over the chicken. Transfer skillet to a preheated 375°F oven and bake for 15-20 minutes until chicken reaches 165°F internal temperature. Baste with reserved sauce halfway through.
- Remove chicken to a plate and tent with foil to rest for 5 minutes.
- Return skillet to stovetop over medium heat. Add butter if using and simmer sauce for 2-3 minutes until slightly thickened and glossy.
- Serve chicken with the thickened sauce spooned over top and garnish with chopped parsley.
