Sticky-sweet and smoky with a kick of heat, these Honey Chipotle Chicken Skewers will be the star of your next BBQ – juicy, caramelized perfection on a stick!

- 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/3 cup honey, preferably raw
- 3 tablespoons olive oil
- 2–3 chipotle peppers in adobo sauce, finely chopped
- 2 tablespoons adobo sauce from the can
- 4 cloves garlic, minced
- 2 tablespoons fresh lime juice
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped (plus more for garnish)
- 8–10 wooden or metal skewers
Instructions
- In a medium bowl, whisk together honey, olive oil, chopped chipotle peppers, adobo sauce, garlic, lime juice, cumin, paprika, salt, pepper, and cilantro. Reserve 1/4 cup of marinade for glazing later.
- Place chicken cubes in a zip-top bag, pour remaining marinade over them, seal, and massage to coat. Refrigerate for 2-4 hours.
- If using wooden skewers, soak in water for 30 minutes. Remove chicken from refrigerator 20 minutes before cooking.
- Preheat grill to medium-high heat (375-400°F). Thread marinated chicken onto skewers, leaving small spaces between pieces.
- Oil grill grates and cook skewers for 4-5 minutes per side until internal temperature reaches 165°F.
- During the last 2 minutes, brush the reserved marinade over the skewers to create a caramelized glaze.
- Transfer to a serving platter, garnish with fresh cilantro and lime wedges, and let rest for 3-5 minutes before serving.
