Description

Homemade Mexican Pizza: Crispy tortilla crust topped with seasoned beef, melty cheese, salsa, and avocado makes a quick and comforting crowd-pleaser.

  • 2 tablespoons vegetable oil
  • 1 pound (454g) lean ground beef
  • 1 packet (1.25 oz/35g) taco seasoning (or 3 tablespoons homemade blend)
  • ¼ cup (60ml) water
  • 1 can (16 oz/454g) refried beans
  • 2 cups (226g) shredded Mexican cheese blend
  • 1 cup (150g) diced tomatoes
  • ½ cup (75g) sliced black olives
  • 4 green onions, thinly sliced
  • ¼ cup (10g) fresh cilantro, chopped

Instructions

  1. Step 1: Prepare the Tortilla Bases Preheat your oven to 400°F (200°C). Lightly brush both sides of each tortilla with vegetable oil. Place four tortillas on a baking sheet and bake for 3-4 minutes until they begin to turn golden and crisp up slightly. Remove from the oven, flip them over, and bake for another 2-3 minutes. Repeat with the remaining four tortillas. Set aside while preparing the filling.
  2. Step 2: Cook the Beef Mixture In a large skillet over medium-high heat, brown the ground beef, breaking it into small crumbles as it cooks (about 5-7 minutes). Once no pink remains, drain excess fat if necessary. Add the taco seasoning and water, stirring well to combine. Reduce heat to medium-low and simmer for 3-4 minutes until the mixture thickens and most liquid evaporates. Remove from heat.
  3. Step 3: Warm the Refried Beans In a small saucepan, warm the refried beans over medium-low heat for 2-3 minutes, stirring occasionally. Add a tablespoon of water if needed to achieve a spreadable consistency. The warmed beans spread more easily and create a better seal between tortillas.
  4. Step 4: Assemble Your Mexican Pizzas Place four of the baked tortillas on a clean baking sheet. Spread each with about 3 tablespoons of the warm refried beans, leaving a small border around the edge. Top each with approximately ¼ cup of the seasoned beef mixture, spreading it evenly. Sprinkle each with 2 tablespoons of shredded cheese, then place another baked tortilla on top to create a sandwich.
  5. Step 5: Add Final Toppings and Bake Spread another thin layer of refried beans on top of each pizza (about 2 tablespoons per pizza). Distribute the remaining seasoned beef evenly among the four pizzas. Sprinkle the remaining cheese over each pizza, then bake for 5-6 minutes until the cheese melts completely and edges become golden brown.
