- 1 lb (454g) ground beef (80/20 lean-to-fat ratio works best)
- 1 medium head green cabbage (about 2 lbs/900g), cored and chopped into 1-inch pieces
- 1 medium yellow onion, finely diced (about 1 cup)
- 3 cloves garlic, minced
- 2 tbsp olive oil or butter
- 1 tbsp Worcestershire sauce
- 1 tsp paprika (sweet or smoked)
- 1 tsp dried oregano
- ½ tsp caraway seeds (optional but adds authentic flavor)
- ¼ cup beef broth or water
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil and brown the ground beef for 5-6 minutes, letting it develop a crust before breaking into smaller pieces. Season with salt and pepper.
- Reduce heat to medium and add diced onion to the beef. Cook for 3-4 minutes until translucent, then add garlic, paprika, oregano, and caraway seeds. Stir for 30 seconds until fragrant.
- Add half the cabbage to the skillet with a pinch of salt. Cook for 3 minutes, then add remaining cabbage and Worcestershire sauce.
- Pour in beef broth, scraping up browned bits from the pan. Reduce heat to medium-low, cover, and simmer for 8-10 minutes, stirring occasionally.
- Remove lid and cook for 2-3 more minutes to reduce liquid. Adjust seasonings to taste and garnish with fresh parsley before serving.
