- 1½ pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons cornstarch
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon avocado or olive oil
- ⅓ cup low-sodium soy sauce
- 3 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 tablespoons sesame seeds, plus more for garnish
- 3 green onions, thinly sliced
- ¼ teaspoon red pepper flakes (optional)
Instructions
- In a medium bowl, toss chicken cubes with 2 tablespoons cornstarch, salt, and pepper until evenly coated.
- Heat oil in a large non-stick skillet over medium-high heat. Add chicken in a single layer and cook for 3-4 minutes per side until golden and cooked through. Transfer to a plate.
- In a bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
- In a separate small bowl, mix 1 tablespoon cornstarch with 2 tablespoons water to create a slurry.
- Return the skillet to medium heat and pour in the sauce mixture. Bring to a simmer, then whisk in the cornstarch slurry. Simmer for 1-2 minutes until thickened.
- Add the cooked chicken back to the pan along with sesame seeds and most of the green onions. Toss until chicken is well coated and heated through, about 1-2 minutes.
- Serve hot over rice, garnished with remaining green onions and additional sesame seeds.
