- 1 lb (454g) lean ground beef (90/10 recommended)
- 1 tablespoon olive oil
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- 1 avocado, sliced
- 4 tablespoons pickles, chopped
- 4 tablespoons shredded cheddar cheese (optional)
- ¼ cup Greek yogurt
- 2 tablespoons mayonnaise
- 1 tablespoon ketchup
- 1 teaspoon mustard
- 1 teaspoon pickle juice
Instructions
- Combine Greek yogurt, mayonnaise, ketchup, mustard, and pickle juice in a small bowl. Stir until smooth and refrigerate until ready to use.
- In a medium bowl, mix ground beef with Worcestershire sauce, garlic powder, onion powder, smoked paprika, salt, and pepper. Let rest for 5-10 minutes.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned beef in large chunks and let sear for 2 minutes before breaking apart.
- Continue cooking the beef, breaking into smaller pieces, until browned and cooked through, about 7-8 minutes total. Drain excess fat if needed.
- Prepare vegetables by washing and chopping romaine lettuce, halving cherry tomatoes, dicing cucumber, slicing red onion, and slicing avocado.
- Assemble bowls by dividing lettuce among four bowls, then topping with cooked beef, vegetables, pickles, and cheese if using.
- Drizzle with special sauce or serve sauce on the side.
