- 2 cups rolled oats (180g)
- 1 cup whole wheat flour (120g)
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon salt
- 2 large eggs
- ½ cup honey (170g)
- ¼ cup coconut oil, melted (60ml)
- 1 cup plain Greek yogurt (245g)
- 2 teaspoons vanilla extract
- 2 medium apples (about 2 cups/240g), diced
- ½ cup chopped walnuts or pecans (optional, 60g)
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper or lightly grease it.
- In a large bowl, whisk together rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, combine eggs, honey, and melted coconut oil, then add Greek yogurt and vanilla extract.
- Pour the wet ingredients into the dry ingredients and fold together just until combined.
- Gently fold in the diced apples and optional nuts with minimal mixing.
- Transfer the batter to your prepared baking pan and spread evenly.
- Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for at least 15 minutes before slicing and serving.
