Ingredients

  • 4 boneless, skinless chicken breasts (68 oz each)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 lemon, cut into wedges for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and pat chicken breasts dry with paper towels.
  2. If chicken breasts are uneven in thickness, place between plastic wrap and gently pound to an even 3/4-inch thickness.
  3. In a small bowl, combine salt, pepper, garlic powder, oregano, paprika, onion powder, and cayenne (if using).
  4. Drizzle chicken with olive oil and rub to coat all sides.
  5. Sprinkle seasoning mixture evenly over both sides of chicken, pressing gently to adhere.
  6. Line a baking sheet with parchment paper and arrange chicken breasts with space between each piece.
  7. Bake for 16-22 minutes until internal temperature reaches 165°F (74°C).
  8. Remove from oven, transfer to a cutting board, and tent loosely with foil.
  9. Rest for 5-10 minutes before slicing against the grain.
  10. Garnish with fresh parsley and serve with lemon wedges.
