  • 1 package (3.4 oz) instant vanilla pudding mix
  • 1½ cups sweetened shredded coconut, divided
  • 8 oz cool whip or whipped topping, thawed
  • 1 cup mini marshmallows
  • ¼ cup maraschino cherries, drained and halved (optional)
  • 1 tablespoon lime zest (optional)

Instructions

  1. In a large mixing bowl, combine undrained crushed pineapple and instant vanilla pudding mix. Stir for about 2 minutes until the mixture begins to thicken.
  2. Fold in 1¼ cups of the sweetened shredded coconut, reserving ¼ cup for toasting and garnish.
  3. Gently stir in the mini marshmallows, ensuring they’re evenly distributed throughout the mixture.
  4. Using a rubber spatula, carefully fold in the whipped topping until just combined. Avoid aggressive stirring to maintain the fluffy texture.
  5. Optional: In a dry skillet over medium heat, toast the remaining ¼ cup coconut, stirring constantly until golden brown (3-5 minutes). Remove from heat and cool completely.
  6. Transfer to a serving bowl or individual dessert dishes. If using, sprinkle with lime zest for color and flavor. Top with toasted coconut and maraschino cherry halves if desired.
