Hamburger Steak Mushroom Gravy

  • pounds ground beef (80/20 lean-to-fat ratio)
  • ⅓ cup breadcrumbs (plain or Italian-seasoned)
  • 1 large egg, lightly beaten
  • 1 small onion, finely diced (about ½ cup)
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried herbs (thyme, oregano, or Italian seasoning)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons vegetable oil for cooking
  • 8 ounces mushrooms (cremini or white button), sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine ground beef, breadcrumbs, beaten egg, diced onion, minced garlic, Worcestershire sauce, dried herbs, salt, and pepper. Mix gently until just combined.
  2. Form mixture into 4-6 oval patties about ¾-inch thick. Press a slight depression in the center of each patty.
  3. Heat vegetable oil in a large skillet over medium-high heat. Cook patties for 4-5 minutes per side until browned and cooked through (160°F internal temperature). Transfer to a plate and cover loosely with foil.
  4. In the same pan, add butter and melt. Add mushrooms and cook undisturbed for 2-3 minutes, then stir and cook another 3-4 minutes until browned.
  5. Add sliced onions and cook for 3-4 minutes until softened. Add garlic and cook for 30 seconds until fragrant.
  6. Sprinkle flour over the mushroom mixture and stir for 1-2 minutes. Gradually whisk in beef broth, scraping up browned bits from the pan.
  7. Add Worcestershire sauce and thyme. Bring to a simmer and cook for 5-7 minutes until thickened. Season with salt and pepper.
  8. Return hamburger steaks to the pan, nestling them into the gravy. Simmer for 2-3 minutes to reheat and blend flavors.
  9. Serve hot with gravy spooned over each steak alongside mashed potatoes or your favorite side dish.
