Ingredients

  • 24 oz (680g) high-quality white chocolate chips or chopped white chocolate bars
  • 14 oz (396g) sweetened condensed milk (1 standard can)
  • 2 tbsp (28g) unsalted butter
  • 1 tsp pure vanilla extract
  • ¼ tsp salt
  • 1 cup (150g) fresh strawberries, hulled and chopped (or thawed frozen strawberries)
  • 3 tbsp (36g) granulated sugar
  • 1 tbsp (15ml) lemon juice
  • 1 tbsp (8g) cornstarch mixed with 1 tbsp water (slurry)
  • Red food coloring (optional, for deeper red color)

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving overhang on sides. Combine strawberries, sugar, and lemon juice in a saucepan. Simmer over medium heat, mashing berries as they soften. Cook for 5 minutes until berries break down.
  2. Whisk cornstarch slurry and add to strawberry mixture. Stir constantly for 1-2 minutes until thickened to jam consistency. Strain through a fine-mesh sieve, add food coloring if desired, and set aside to cool.
  3. In a medium saucepan, combine white chocolate, condensed milk, and butter. Melt over low heat, stirring constantly. Once nearly melted, remove from heat and stir until smooth. Add vanilla and salt.
  4. Pour 2/3 of white chocolate mixture into prepared pan. Dollop spoonfuls of strawberry mixture across surface (reserve 2 tablespoons). Pour remaining white chocolate over top.
  5. Add remaining strawberry mixture on top. Use a skewer or knife to create swirls resembling bloody vampire kisses. Create dramatic patterns by drawing through mixtures in different directions.
  6. Cool at room temperature for 30 minutes, then refrigerate for at least 3 hours until set. Lift fudge out using parchment paper. Cut into 1-inch squares with a warm knife for clean edges.
