These Halloween Vampire Bite Brownies with their oozing “blood” filling will be the show-stopping dessert that has everyone doing a double-take at your Halloween party.

- 8 oz (225g) high-quality semi-sweet chocolate, chopped
- ¾ cup (170g) unsalted butter
- 1 cup (200g) granulated sugar
- ½ cup (100g) packed brown sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- ¾ cup (95g) all-purpose flour
- ¼ cup (30g) unsweetened cocoa powder
- ½ teaspoon salt
- ½ cup (90g) semi-sweet chocolate chips
- 1 cup (125g) fresh or frozen raspberries
- ¼ cup (50g) granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon water
- ½ teaspoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving overhang for easy removal.
- Melt chocolate and butter in a microwave-safe bowl in 30-second intervals, stirring until smooth. Allow to cool slightly.
- Whisk together granulated sugar, brown sugar, eggs, and vanilla until lighter in color and slightly fluffy (about 2 minutes).
- Stir the cooled chocolate mixture into the egg mixture until well combined.
- In a separate bowl, whisk together flour, cocoa powder, and salt. Fold into wet ingredients until just combined, then fold in chocolate chips.
- Pour batter into prepared pan and bake for 25-30 minutes until a toothpick shows a few moist crumbs.
- While brownies bake, make the “blood”: combine raspberries and sugar in a saucepan over medium heat. Cook until berries break down (about 5 minutes).
- Mix cornstarch with water to create a slurry, stir into raspberry mixture with lemon juice, and cook 2-3 minutes until thickened. Strain and cool completely.
- Once brownies are completely cooled, cut into squares. Create curved “bite marks” on edges using a small round object, then make two small puncture holes within each bite mark.
- Fill the bite marks with raspberry sauce, allowing it to drip down slightly for the vampire bite effect.
