  • 3 cups (18 oz) high-quality dark chocolate chips (60-70% cacao)
  • 1 (14 oz) can sweetened condensed milk
  • 4 tablespoons (2 oz) unsalted butter, cut into cubes
  • 1/4 teaspoon salt
  • 1 teaspoon pure vanilla extract
  • 1 cup (6 oz) dried tart cherries, roughly chopped
  • 1/3 cup (3.5 oz) cherry preserves (not cherry pie filling)
  • 2 tablespoons black cocoa powder (regular cocoa powder works as a substitute)
  • 2 tablespoons Kirsch or cherry liqueur (optional, can substitute cherry extract)

Instructions

  1. Line an 8×8 inch square baking pan with parchment paper, leaving overhang on all sides. Lightly spray with non-stick cooking spray.
  2. In a small saucepan, combine cherry preserves, 1/3 of the chopped dried cherries, and the Kirsch or cherry extract. Warm over low heat for 2-3 minutes until fluid. Set aside.
  3. Set up a double boiler with a heat-safe bowl over simmering water. Add dark chocolate chips, sweetened condensed milk, butter, and salt. Stir until completely melted and smooth (5-7 minutes).
  4. Remove from heat and stir in black cocoa powder and vanilla extract. Fold in remaining chopped dried cherries.
  5. Pour half the chocolate mixture into your prepared pan. Dollop half of the warm cherry mixture across the surface. Using a knife, gently swirl to create vein-like patterns.
  6. Pour remaining chocolate on top and repeat the swirling process with remaining cherry mixture.
  7. Allow fudge to cool at room temperature for 30 minutes, then cover and refrigerate for at least 3 hours or overnight.
  8. Once set, lift fudge from pan using parchment paper. With a warm sharp knife, slice into 1-inch squares or fang-shaped triangles.
