These Halloween Coconut Kiss of Death Bites are wickedly adorable and dangerously delicious. One bite and you’ll be haunted by cravings for the rest of the season!


Ingredients

  • 3 cups (270g) sweetened shredded coconut
  • 1/2 cup (120ml) sweetened condensed milk
  • 1/4 cup (60ml) coconut cream
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 12 drops black food coloring (optional)
  • 1 cup (175g) dark chocolate chips (60-70% cacao)
  • 2 tablespoons (30g) unsalted butter
  • 1/4 teaspoon peppermint extract
  • 2 tablespoons (30ml) heavy cream
  • 1/4 cup (22g) additional shredded coconut for rolling
  • Edible black sugar pearls or sprinkles
  • 23 drops red food coloring (optional)

Instructions

  1. Mix shredded coconut, sweetened condensed milk, coconut cream, vanilla extract, and salt in a large bowl until well combined. Add black food coloring if desired for a marbled effect.
  2. Roll tablespoon-sized amounts of coconut mixture into balls. Create a hollow in each using your thumb, being careful not to break through the bottom.
  3. Place coconut shells on a parchment-lined baking sheet and refrigerate for 30 minutes.
  4. Combine chocolate chips, butter, and heavy cream in a microwave-safe bowl. Heat in 20-second intervals, stirring between each, until melted. Add peppermint extract and let cool slightly.
  5. Fill chilled coconut shells with chocolate mixture using a small spoon or piping bag.
  6. Add black sugar pearls to the center of each bite. For a bloody effect, mix red food coloring with a small amount of chocolate and drizzle over some bites.
  7. Roll edges in additional coconut if desired, then refrigerate for at least 1 hour until chocolate is set.
