- 1 lb (454g) lean ground turkey
- 2 medium sweet potatoes (about 1.5 lbs/680g), peeled and diced into ½-inch cubes
- 1 medium yellow onion (about 1 cup/160g), diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 2 tablespoons olive oil, divided
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon salt (plus more to taste)
- ¼ teaspoon black pepper
- 1 cup (113g) shredded cheese (cheddar, mozzarella, or a blend)
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Peel and dice sweet potatoes into ½-inch cubes.
- Toss sweet potatoes with 1 tablespoon olive oil, ¼ teaspoon salt, and a pinch of pepper. Spread on a baking sheet and roast for 15-20 minutes until beginning to soften.
- Meanwhile, heat remaining tablespoon of olive oil in a large oven-safe skillet over medium heat. Sauté onion for 3-4 minutes until translucent.
- Add minced garlic and cook for 30 seconds until fragrant. Add ground turkey, breaking it up as it cooks.
- When turkey is almost cooked through (about 5 minutes), add diced red bell pepper, oregano, cumin, smoked paprika, remaining salt, and black pepper.
- Once turkey is fully cooked and sweet potatoes are partially roasted, add sweet potatoes to the skillet with turkey mixture. Gently combine all ingredients.
- Sprinkle shredded cheese evenly over the top and bake for an additional 10-15 minutes, until cheese is melted and golden.
- Optional: Broil for the last 2 minutes for an extra golden top, watching closely to prevent burning.
- Remove from oven and let rest for 5 minutes before serving. Garnish with freshly chopped parsley if desired.
