  • 1 lb (454g) lean ground turkey
  • 2 medium sweet potatoes (about 1.5 lbs/680g), peeled and diced into ½-inch cubes
  • 1 medium yellow onion (about 1 cup/160g), diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt (plus more to taste)
  • ¼ teaspoon black pepper
  • 1 cup (113g) shredded cheese (cheddar, mozzarella, or a blend)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Peel and dice sweet potatoes into ½-inch cubes.
  2. Toss sweet potatoes with 1 tablespoon olive oil, ¼ teaspoon salt, and a pinch of pepper. Spread on a baking sheet and roast for 15-20 minutes until beginning to soften.
  3. Meanwhile, heat remaining tablespoon of olive oil in a large oven-safe skillet over medium heat. Sauté onion for 3-4 minutes until translucent.
  4. Add minced garlic and cook for 30 seconds until fragrant. Add ground turkey, breaking it up as it cooks.
  5. When turkey is almost cooked through (about 5 minutes), add diced red bell pepper, oregano, cumin, smoked paprika, remaining salt, and black pepper.
  6. Once turkey is fully cooked and sweet potatoes are partially roasted, add sweet potatoes to the skillet with turkey mixture. Gently combine all ingredients.
  7. Sprinkle shredded cheese evenly over the top and bake for an additional 10-15 minutes, until cheese is melted and golden.
  8. Optional: Broil for the last 2 minutes for an extra golden top, watching closely to prevent burning.
  9. Remove from oven and let rest for 5 minutes before serving. Garnish with freshly chopped parsley if desired.
