Instructions
- Step 1: Heat a large skillet over medium heat.
- Step 2: Peel and dice the potatoes into small cubes, about 1/2 inch in size.
- Step 3: Add the olive oil to the skillet and swirl to coat the bottom.
- Step 4: Once the oil is hot, add the diced potatoes to the skillet.

- Step 15: Return the cooked potatoes to the skillet with the turkey and onions.
- Step 16: Pour the chicken broth into the skillet and stir to combine.
- Step 17: Reduce the heat to low and cover the skillet.
