Ground Chicken Caprese


Description

Juicy chicken patties topped with melty mozzarella, fresh basil, and sweet tomatoes. This 30-minute dinner brings all the Caprese flavors you love in a protein-packed meal that’s weeknight-friendly.


Ingredients

  • 1 lb (454g) ground chicken
  • 1/4 cup (25g) breadcrumbs
  • 1/4 cup (25g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup (10g) fresh basil leaves, chopped, plus more for garnish
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 oz (226g) fresh mozzarella, sliced into 4 rounds
  • 1 cup (150g) cherry tomatoes, halved
  • 2 tablespoons balsamic glaze

Instructions

  1. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, chopped basil, Italian seasoning, salt, and pepper. Mix gently until just combined.
  2. Form mixture into 4 equal-sized patties, about 1/2-inch thick.
  3. Heat olive oil in a large skillet over medium heat. Add patties and cook for 4-5 minutes until golden brown on bottom.
  4. Flip patties and cook for another 3-4 minutes until internal temperature reaches 160°F.
  5. Place a slice of mozzarella on each patty, cover the pan with a lid, and cook for 1-2 minutes until cheese melts.
  6. Toss halved cherry tomatoes with a pinch of salt and drizzle of olive oil.
  7. Transfer patties to plates, top with prepared tomatoes, sprinkle with fresh basil, and drizzle with balsamic glaze.
  8. Serve immediately while cheese is still warm and melty.
