- 1 lb (454g) ground chicken
- 1/4 cup (25g) breadcrumbs
- 1/4 cup (25g) grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup (10g) fresh basil leaves, chopped, plus more for garnish
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 8 oz (226g) fresh mozzarella, sliced into 4 rounds
- 1 cup (150g) cherry tomatoes, halved
- 2 tablespoons balsamic glaze
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, chopped basil, Italian seasoning, salt, and pepper. Mix gently until just combined.
- Form mixture into 4 equal-sized patties, about 1/2-inch thick.
- Heat olive oil in a large skillet over medium heat. Add patties and cook for 4-5 minutes until golden brown on bottom.
- Flip patties and cook for another 3-4 minutes until internal temperature reaches 160°F.
- Place a slice of mozzarella on each patty, cover the pan with a lid, and cook for 1-2 minutes until cheese melts.
- Toss halved cherry tomatoes with a pinch of salt and drizzle of olive oil.
- Transfer patties to plates, top with prepared tomatoes, sprinkle with fresh basil, and drizzle with balsamic glaze.
- Serve immediately while cheese is still warm and melty.
