Ingredients

Scale
  • 1 lb (450g) lean ground beef
  • 3 tablespoons vegetable oil, divided
  • 1 medium onion, diced (about 1 cup)
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced into thin strips
  • 2 cups broccoli florets, cut into bite-sized pieces
  • 1 carrot, julienned or thinly sliced
  • 4 green onions, sliced diagonally
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Combine soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes in a small bowl. In another bowl, mix cornstarch and water to create a slurry, then add to sauce mixture and set aside.
  2. Heat 1 tablespoon oil in a large wok or skillet over high heat. Add ground beef and cook until browned, about 3-4 minutes, breaking into smaller pieces. Transfer to a plate.
  3. Return wok to high heat, add remaining 2 tablespoons oil. Add onions and stir-fry for 1 minute, then add garlic and ginger, cooking for 30 seconds until fragrant.
  4. Add broccoli and carrots, stir-frying for 2-3 minutes until beginning to soften. Add bell peppers and continue cooking for 1-2 minutes.
  5. Return cooked beef to the wok. Stir sauce mixture and pour over the beef and vegetables. Stir continuously as sauce thickens, about 1-2 minutes.
  6. Remove from heat, sprinkle with green onions, and serve immediately over steamed rice or noodles.
