Make this easy Ground Beef Casserole with savory beef, cheese, and creamy layers. Perfect for a family dinner or meal prep!
Ingredients
Scale
- 1 lb ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 can cream of mushroom soup (or any cream soup of your choice)
- 1 cup shredded cheddar cheese
- 1 cup cooked pasta (penne, rotini, or elbow macaroni)
- 1/2 cup milk
- Salt and pepper to taste
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- Brown the beef: In a large skillet, cook the ground beef over medium heat until browned. Break the meat into small crumbles as it cooks. Once browned, remove any excess fat.
- Cook the vegetables: Add the chopped onion, bell pepper, and garlic to the skillet. Sauté for 3-4 minutes, until the vegetables are softened and fragrant.
- Combine the ingredients: In a large mixing bowl, combine the cooked beef and vegetables with the cream of mushroom soup, shredded cheese, cooked pasta, milk, salt, and pepper. Mix everything together until well-combined.
- Assemble the casserole: Transfer the mixture into the prepared baking dish and spread it evenly. If desired, sprinkle breadcrumbs over the top for a crispy finish.
- Bake: Bake the casserole for 25-30 minutes, or until the top is golden brown and bubbly. If you like a crispier top, uncover the dish during the last 10 minutes of baking.
- Cool and serve: Let the casserole rest for 10 minutes before slicing and serving. Garnish with fresh herbs, like parsley, if desired.
