  • 1 lb (454g) lean ground beef (90/10 recommended)
  • 2 cups (370g) cooked quinoa, cooled
  • 3 cups (180g) broccoli florets, cut into bite-sized pieces
  • 1 medium onion (about 1 cup/160g), finely diced
  • 3 cloves garlic (about 1 tablespoon/9g), minced
  • 1 tablespoon (15ml) fresh ginger, grated
  • 3 tablespoons (45ml) low-sodium soy sauce
  • 1 tablespoon (15ml) sesame oil
  • 1 tablespoon (15ml) olive oil or vegetable oil
  • 2 large eggs, lightly beaten
  • 2 green onions (about ¼ cup/25g), thinly sliced
  • ½ teaspoon (2.5g) red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef, season with salt and pepper, and cook until no longer pink, about 5-6 minutes. Drain excess fat if necessary.
  2. Push beef to one side and add diced onions to the empty space. Cook for 2 minutes, then add garlic and ginger. Cook for 30 seconds until fragrant, then mix with the beef.
  3. Add broccoli florets and stir-fry for 3 minutes until bright green but still crisp. Add a splash of water and cover briefly if needed to steam.
  4. Push everything to the side, pour beaten eggs into the empty space, and scramble until just set. Mix with the beef and broccoli.
  5. Add cold quinoa, breaking up any clumps. Let it cook undisturbed for 1-2 minutes to develop some crispness.
  6. Pour soy sauce and sesame oil over the mixture. Toss everything together until well combined and heated through, about 2 minutes.
  7. Remove from heat, sprinkle with green onions and red pepper flakes if using. Serve hot with additional garnishes if desired.
