- 1 lb (454g) lean ground beef (90/10 recommended)
- 2 cups (370g) cooked quinoa, cooled
- 3 cups (180g) broccoli florets, cut into bite-sized pieces
- 1 medium onion (about 1 cup/160g), finely diced
- 3 cloves garlic (about 1 tablespoon/9g), minced
- 1 tablespoon (15ml) fresh ginger, grated
- 3 tablespoons (45ml) low-sodium soy sauce
- 1 tablespoon (15ml) sesame oil
- 1 tablespoon (15ml) olive oil or vegetable oil
- 2 large eggs, lightly beaten
- 2 green onions (about ¼ cup/25g), thinly sliced
- ½ teaspoon (2.5g) red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground beef, season with salt and pepper, and cook until no longer pink, about 5-6 minutes. Drain excess fat if necessary.
- Push beef to one side and add diced onions to the empty space. Cook for 2 minutes, then add garlic and ginger. Cook for 30 seconds until fragrant, then mix with the beef.
- Add broccoli florets and stir-fry for 3 minutes until bright green but still crisp. Add a splash of water and cover briefly if needed to steam.
- Push everything to the side, pour beaten eggs into the empty space, and scramble until just set. Mix with the beef and broccoli.
- Add cold quinoa, breaking up any clumps. Let it cook undisturbed for 1-2 minutes to develop some crispness.
- Pour soy sauce and sesame oil over the mixture. Toss everything together until well combined and heated through, about 2 minutes.
- Remove from heat, sprinkle with green onions and red pepper flakes if using. Serve hot with additional garnishes if desired.
