- 2 lbs (900g) boneless, skinless chicken breasts or thighs
- 1/4 cup (85g) honey, preferably local raw honey
- 3 tablespoons (45ml) olive oil
- 3 tablespoons (45ml) fresh lime juice (approximately 2 medium limes)
- 2 tablespoons lime zest (from approximately 2 limes)
- 1/4 cup (15g) fresh cilantro, finely chopped, plus extra for garnish
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon red pepper flakes (optional)
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Lime wedges for serving
Instructions
- In a medium bowl, whisk together honey, olive oil, lime juice, lime zest, chopped cilantro, minced garlic, chili powder, red pepper flakes (if using), cumin, salt, and pepper until well combined.
- Pound chicken breasts to even thickness if using. Place chicken in a large zip-top bag or shallow dish and pour marinade over, ensuring all pieces are well coated. Refrigerate for at least 4 hours or overnight.
- Remove chicken from refrigerator 20 minutes before cooking. Preheat grill to medium-high heat (375-450°F) and oil the grates.
- Remove chicken from marinade, letting excess drip off. Sear on the hotter part of the grill for 2-3 minutes per side until grill marks form.
- Move chicken to cooler side of grill, close lid, and continue cooking until internal temperature reaches 165°F (74°C), about 3-5 more minutes per side.
- Transfer chicken to a plate, tent with foil, and rest for 5 minutes. Sprinkle with fresh cilantro and serve with lime wedges.
