Greek Chicken Tenders

These Greek chicken tenders are ready in 30 minutes and taste like you’re dining at a taverna on a Greek island—the perfect solution for Mediterranean cravings without leaving your kitchen!


Ingredients

  • 2 lbs (900g) chicken tenders (or boneless, skinless chicken breasts cut into strips)
  • 1/4 cup (60ml) extra virgin olive oil
  • 3 tablespoons (45ml) fresh lemon juice
  • 4 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon Greek seasoning blend (or additional oregano and thyme)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tablespoon honey (optional)

Instructions

  1. In a large bowl, combine olive oil, lemon juice, garlic, oregano, thyme, rosemary, Greek seasoning, salt, pepper, lemon zest, Greek yogurt, and honey. Whisk until well blended.
  2. Add chicken tenders to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, ideally 2-4 hours.
  3. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking oil.
  4. Arrange marinated chicken tenders on the baking sheet, ensuring they don’t touch. Bake for 15-18 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
  5. For more color, broil for the final 1-2 minutes, watching carefully to prevent burning.
  6. Remove from oven, tent with foil, and rest for 5 minutes before serving.
  7. Garnish with fresh lemon wedges, chopped parsley, and crumbled feta cheese if desired.
