- 2 lbs (900g) chicken tenders (or boneless, skinless chicken breasts cut into strips)
- 1/4 cup (60ml) extra virgin olive oil
- 3 tablespoons (45ml) fresh lemon juice
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 tablespoon Greek seasoning blend (or additional oregano and thyme)
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon lemon zest
- 1/4 cup (60g) plain Greek yogurt
- 1 tablespoon honey (optional)
Instructions
- In a large bowl, combine olive oil, lemon juice, garlic, oregano, thyme, rosemary, Greek seasoning, salt, pepper, lemon zest, Greek yogurt, and honey. Whisk until well blended.
- Add chicken tenders to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 30 minutes, ideally 2-4 hours.
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with cooking oil.
- Arrange marinated chicken tenders on the baking sheet, ensuring they don’t touch. Bake for 15-18 minutes, flipping halfway through, until internal temperature reaches 165°F (74°C).
- For more color, broil for the final 1-2 minutes, watching carefully to prevent burning.
- Remove from oven, tent with foil, and rest for 5 minutes before serving.
- Garnish with fresh lemon wedges, chopped parsley, and crumbled feta cheese if desired.
