Crispy, garlicky chicken that tastes like it came from an Italian restaurant but takes just 30 minutes to make. Your family will think you spent all day in the kitchen.

- 4 boneless, skinless chicken breasts (about 1½ lbs or 680g)
- ½ cup (50g) freshly grated Parmesan cheese
- 4 large garlic cloves, minced (about 2 tablespoons)
- 1 cup (120g) all-purpose flour
- 2 large eggs, beaten
- 1 cup (100g) panko breadcrumbs
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 3 tablespoons olive oil for cooking
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
- Place chicken breasts between plastic wrap and pound to an even ½-inch thickness using a meat mallet. Pat dry with paper towels.
- Set up three shallow dishes: In the first, mix flour with ¼ teaspoon each salt and pepper. In the second, beat eggs until smooth. In the third, combine panko, Parmesan, minced garlic, Italian seasoning, garlic powder, and remaining salt and pepper.
- Dredge each chicken breast in flour, shake off excess, dip in egg, then press firmly into the Parmesan-breadcrumb mixture. Let coated chicken rest for 5 minutes.
- Heat olive oil in a large skillet over medium heat until shimmering. Cook chicken for 4-5 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
- Transfer to a wire rack and rest for 3-5 minutes. Garnish with chopped parsley and serve with lemon wedges.
