  • 4 boneless, skinless chicken breasts (about 2 lbs or 900g)
  • 4 tablespoons (60ml) olive oil, divided
  • 56 garlic cloves, minced (about 2 tablespoons)
  • 1 cup (100g) freshly grated Parmesan cheese
  • ¾ cup (180ml) heavy cream
  • ½ cup (120g) sour cream
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup (40g) panko breadcrumbs
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Pat chicken breasts dry with paper towels, season with salt and pepper, and place in a lightly oiled 9×13-inch baking dish.
  2. Heat 2 tablespoons olive oil in a small skillet over medium-low heat. Add minced garlic and cook until fragrant, about 30-45 seconds. Transfer to a mixing bowl.
  3. Add heavy cream, sour cream, half the Parmesan cheese, Italian seasoning, and paprika to the garlic. Whisk until smooth. Pour this mixture evenly over the chicken breasts.
  4. In a separate bowl, combine panko breadcrumbs, remaining Parmesan cheese, and 2 tablespoons olive oil. Sprinkle this mixture over the chicken.
  5. Bake for 25-30 minutes until chicken reaches 165°F (74°C) and topping is golden brown. For extra crispiness, broil for the final 2-3 minutes, watching carefully.
  6. Let rest for 5 minutes before serving. Garnish with fresh parsley.
