- 12 oz (340g) egg noodles or ramen noodles
- 1 lb (450g) sirloin steak, cut into 1-inch cubes
- 4 tbsp (56g) unsalted butter, divided
- 6 cloves garlic, minced (about 2 tbsp)
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tsp brown sugar
- ¼ tsp red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 2 green onions, thinly sliced for garnish
- Fresh parsley, chopped for garnish (optional)
Instructions
- Pat steak pieces dry with paper towels and season generously with salt and pepper. Heat a large skillet over high heat, add 1 tbsp olive oil and 1 tbsp butter. Once hot, add steak in a single layer and sear undisturbed for 1-2 minutes per side until browned. Remove to a plate.
- Bring a large pot of salted water to boil. Cook noodles until al dente (1-2 minutes less than package directions). Reserve ½ cup pasta water before draining.
- Return skillet to medium heat and add remaining 3 tbsp butter. Cook until butter turns amber and smells nutty. Add minced garlic and cook for 30-60 seconds until fragrant.
- Add soy sauce, Worcestershire sauce, brown sugar, and red pepper flakes if using. Stir to combine into a glossy sauce.
- Add drained noodles to the sauce, tossing to coat. If needed, add splashes of reserved pasta water to reach desired consistency.
- Return steak and any accumulated juices to the pan. Gently fold everything together and heat for about 1 minute.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Serve immediately, garnished with sliced green onions and chopped parsley.
