  • 2 tablespoons (30ml) olive oil
  • 4 tablespoons (56g) unsalted butter
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 1 tablespoon (15ml) soy sauce
  • 1 tablespoon (3g) fresh rosemary, finely chopped
  • 1 teaspoon (5ml) Worcestershire sauce
  • ½ teaspoon (2g) salt
  • ¼ teaspoon (1g) black pepper
  • ¼ teaspoon (0.5g) red pepper flakes (optional)
  • 1 tablespoon (4g) fresh parsley, chopped, for garnish

Instructions

  1. Step 1: Prepare your steak Pat the steak completely dry with paper towels, then trim off any excess fat and cut into 1-inch cubes. Season the steak bites evenly with salt and pepper, tossing to coat all sides. Let them sit at room temperature for about 15 minutes to take the chill off.
  2. Step 2: Sear the steak bites Heat a large cast-iron skillet over high heat until smoking hot. Add olive oil and swirl to coat the bottom. Working in batches to avoid overcrowding, add steak cubes to the pan in a single layer, searing undisturbed for 1-2 minutes until deeply browned on the first side.
  3. Step 3: Cook the steak bites Flip the steak bites and sear for another 1-2 minutes until golden brown on all sides but still medium-rare to medium inside. Transfer the first batch to a plate and repeat with any remaining steak, adding more oil if needed.
  4. Step 4: Make the garlic butter sauce Reduce the heat to medium, return all the steak bites to the pan, and add butter. Let it melt, swirling the pan. Add minced garlic, rosemary, and red pepper flakes if using, stirring continuously for 30-60 seconds until fragrant but not browned.
  5. Step 5: Finish the dish Add soy sauce and Worcestershire sauce to the pan, stirring to create a glossy sauce that coats each piece. Cook for 30 seconds more to marry the flavors without overcooking the steak. Remove from heat immediately and transfer to a serving dish.
