- 1½ pounds (680g) sirloin steak, cut into 1-inch cubes
- 1 pound (450g) baby potatoes, halved (or quartered if large)
- 4 tablespoons (56g) unsalted butter, divided
- 5 cloves garlic, minced (about 1½ tablespoons)
- 2 tablespoons olive oil, divided
- 1 teaspoon dried rosemary (or 1 tablespoon fresh)
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1 teaspoon salt, divided
- ½ teaspoon black pepper, divided
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon red pepper flakes (optional)
Instructions
- Season steak cubes with ½ teaspoon salt and ¼ teaspoon pepper. In a separate bowl, toss potatoes with 1 tablespoon olive oil, remaining salt and pepper, and half the dried herbs.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes cut-side down when possible and cook for 8-10 minutes, turning occasionally, until golden and fork-tender. Transfer to a plate.
- Return pan to high heat and add 2 tablespoons butter. Working in batches if necessary, add steak bites in a single layer and sear for 1-2 minutes per side until browned but still medium-rare to medium inside. Transfer to a clean plate.
- Reduce heat to medium. Add remaining 2 tablespoons butter, minced garlic, and remaining herbs. Cook for 30-60 seconds until fragrant.
- Return potatoes and steak (with any juices) to the pan. Gently toss to coat with the garlic butter sauce. Heat for 1-2 minutes just to warm through.
- Remove from heat, sprinkle with fresh parsley and red pepper flakes if using, and serve immediately.
