Garlic Butter Steak Bites and Potatoes

  • pounds (680g) sirloin steak, cut into 1-inch cubes
  • 1 pound (450g) baby potatoes, halved (or quartered if large)
  • 4 tablespoons (56g) unsalted butter, divided
  • 5 cloves garlic, minced (about 1½ tablespoons)
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper, divided
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Season steak cubes with ½ teaspoon salt and ¼ teaspoon pepper. In a separate bowl, toss potatoes with 1 tablespoon olive oil, remaining salt and pepper, and half the dried herbs.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes cut-side down when possible and cook for 8-10 minutes, turning occasionally, until golden and fork-tender. Transfer to a plate.
  3. Return pan to high heat and add 2 tablespoons butter. Working in batches if necessary, add steak bites in a single layer and sear for 1-2 minutes per side until browned but still medium-rare to medium inside. Transfer to a clean plate.
  4. Reduce heat to medium. Add remaining 2 tablespoons butter, minced garlic, and remaining herbs. Cook for 30-60 seconds until fragrant.
  5. Return potatoes and steak (with any juices) to the pan. Gently toss to coat with the garlic butter sauce. Heat for 1-2 minutes just to warm through.
  6. Remove from heat, sprinkle with fresh parsley and red pepper flakes if using, and serve immediately.
