Garlic Butter Herb Steak Bites with Potatoes

Ingredients

  • pounds sirloin steak, cut into 1-inch cubes
  • 1 pound baby potatoes, halved or quartered if large
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh parsley, chopped, plus more for garnish
  • 1 tablespoon olive oil
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper, divided
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Pat steak cubes dry with paper towels. Season with ½ teaspoon salt and ¼ teaspoon pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add potatoes cut-side down and season with remaining salt and pepper. Cook for 8-10 minutes, turning occasionally, until golden brown and fork-tender. Transfer to a plate.
  3. Return skillet to high heat. Add steak bites in a single layer (working in batches if needed). Sear undisturbed for 1-2 minutes, flip and cook another 1-2 minutes for medium-rare. Remove to a plate.
  4. Reduce heat to medium and return all steak to the pan. Add butter and let melt, then add minced garlic, stirring for 30 seconds.
  5. Add Worcestershire sauce, rosemary, thyme, and red pepper flakes if using. Stir to combine for about 1 minute.
  6. Return potatoes to the skillet, gently toss everything together to coat in the garlic herb butter sauce. Cook 1-2 minutes more.
  7. Sprinkle with fresh parsley and serve immediately.
