These juicy steak bites with potatoes are seared to perfection and smothered in garlic herb butter. Skip the steakhouse and make this one-pan wonder that’s ready in under 30 minutes.

- 1½ pounds sirloin steak, cut into 1-inch cubes
- 1 pound baby potatoes, halved or quartered if large
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced (about 2 tablespoons)
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh parsley, chopped, plus more for garnish
- 1 tablespoon olive oil
- 1 teaspoon salt, divided
- ½ teaspoon black pepper, divided
- ¼ teaspoon red pepper flakes (optional)
- 1 tablespoon Worcestershire sauce
Instructions
- Pat steak cubes dry with paper towels. Season with ½ teaspoon salt and ¼ teaspoon pepper.
- Heat olive oil in a large skillet over medium-high heat. Add potatoes cut-side down and season with remaining salt and pepper. Cook for 8-10 minutes, turning occasionally, until golden brown and fork-tender. Transfer to a plate.
- Return skillet to high heat. Add steak bites in a single layer (working in batches if needed). Sear undisturbed for 1-2 minutes, flip and cook another 1-2 minutes for medium-rare. Remove to a plate.
- Reduce heat to medium and return all steak to the pan. Add butter and let melt, then add minced garlic, stirring for 30 seconds.
- Add Worcestershire sauce, rosemary, thyme, and red pepper flakes if using. Stir to combine for about 1 minute.
- Return potatoes to the skillet, gently toss everything together to coat in the garlic herb butter sauce. Cook 1-2 minutes more.
- Sprinkle with fresh parsley and serve immediately.
