- 1½ pounds (680g) chicken tenderloins
- ½ cup (60g) all-purpose flour
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 large eggs, beaten
- 1 cup (120g) panko breadcrumbs
- 2 tablespoons olive oil
- 4 tablespoons (56g) unsalted butter
- 4 cloves garlic, minced (about 2 tablespoons)
- 1 tablespoon fresh parsley, finely chopped
- 1 teaspoon fresh lemon juice
- ¼ teaspoon red pepper flakes (optional)
Instructions
- Pat chicken tenderloins dry with paper towels and season lightly with salt and pepper.
- In a shallow dish, combine flour, garlic powder, paprika, salt, and pepper. In a second dish, beat the eggs. In a third dish, place panko breadcrumbs.
- Dredge each chicken tender in flour mixture, then dip in beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.
- Let breaded tenders rest on a wire rack for 5 minutes.
- Heat olive oil in a large skillet over medium-high heat.
- Cook chicken tenders for 4-5 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
- While chicken cooks, melt butter in a small saucepan over medium-low heat.
- Add minced garlic to melted butter and cook for 30 seconds until fragrant.
- Remove from heat and stir in parsley, lemon juice, and red pepper flakes if using.
- Transfer cooked tenders to a serving platter and drizzle with warm garlic butter sauce.
- Garnish with additional parsley and serve immediately.
