Garlic Butter Chicken Tenders

  • pounds (680g) chicken tenderloins
  • ½ cup (60g) all-purpose flour
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup (120g) panko breadcrumbs
  • 2 tablespoons olive oil
  • 4 tablespoons (56g) unsalted butter
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh lemon juice
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Pat chicken tenderloins dry with paper towels and season lightly with salt and pepper.
  2. In a shallow dish, combine flour, garlic powder, paprika, salt, and pepper. In a second dish, beat the eggs. In a third dish, place panko breadcrumbs.
  3. Dredge each chicken tender in flour mixture, then dip in beaten eggs, and finally coat with panko breadcrumbs, pressing gently to adhere.
  4. Let breaded tenders rest on a wire rack for 5 minutes.
  5. Heat olive oil in a large skillet over medium-high heat.
  6. Cook chicken tenders for 4-5 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  7. While chicken cooks, melt butter in a small saucepan over medium-low heat.
  8. Add minced garlic to melted butter and cook for 30 seconds until fragrant.
  9. Remove from heat and stir in parsley, lemon juice, and red pepper flakes if using.
  10. Transfer cooked tenders to a serving platter and drizzle with warm garlic butter sauce.
  11. Garnish with additional parsley and serve immediately.
