- 1½ pounds (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 tablespoons (30ml) olive oil
- 6 tablespoons (85g) unsalted butter
- 6 cloves garlic, minced (about 2 tablespoons)
- 1 teaspoon dried Italian herbs (or ½ teaspoon each dried thyme and oregano)
- ½ teaspoon paprika
- ¼ teaspoon red pepper flakes (optional, for heat)
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
Instructions
- Pat chicken pieces dry with paper towels. Season generously with salt and pepper, tossing to coat evenly. Let sit at room temperature for 5-10 minutes.
- Heat olive oil in a large skillet over medium-high heat. Add half the chicken in a single layer and cook for 3-4 minutes without disturbing.
- Flip chicken pieces and cook another 2-3 minutes until golden brown and cooked through. Transfer to a plate and repeat with remaining chicken.
- Reduce heat to medium-low and add 4 tablespoons of butter to the skillet. Once melted, add minced garlic and cook for 30-45 seconds until fragrant.
- Stir in Italian herbs, paprika, and red pepper flakes if using.
- Return all chicken to the skillet, including any accumulated juices. Gently toss to coat in the garlic butter sauce.
- Add remaining 2 tablespoons of butter and lemon juice, stirring until butter is melted and everything is well combined.
- Simmer for 1-2 minutes to allow flavors to meld and sauce to slightly thicken.
- Remove from heat, sprinkle with fresh parsley, and give a final gentle toss.
- Taste and adjust seasoning if needed before serving immediately.
