Garlic Butter Chicken Bites

  • pounds (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 tablespoons (30ml) olive oil
  • 6 tablespoons (85g) unsalted butter
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 1 teaspoon dried Italian herbs (or ½ teaspoon each dried thyme and oregano)
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Pat chicken pieces dry with paper towels. Season generously with salt and pepper, tossing to coat evenly. Let sit at room temperature for 5-10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add half the chicken in a single layer and cook for 3-4 minutes without disturbing.
  3. Flip chicken pieces and cook another 2-3 minutes until golden brown and cooked through. Transfer to a plate and repeat with remaining chicken.
  4. Reduce heat to medium-low and add 4 tablespoons of butter to the skillet. Once melted, add minced garlic and cook for 30-45 seconds until fragrant.
  5. Stir in Italian herbs, paprika, and red pepper flakes if using.
  6. Return all chicken to the skillet, including any accumulated juices. Gently toss to coat in the garlic butter sauce.
  7. Add remaining 2 tablespoons of butter and lemon juice, stirring until butter is melted and everything is well combined.
  8. Simmer for 1-2 minutes to allow flavors to meld and sauce to slightly thicken.
  9. Remove from heat, sprinkle with fresh parsley, and give a final gentle toss.
  10. Taste and adjust seasoning if needed before serving immediately.
