Garlic Butter Baked Chicken Breast Recipe

  • 4 boneless, skinless chicken breasts (about 2 pounds total)
  • 6 tablespoons (85g) unsalted butter, softened
  • 4 cloves garlic, finely minced (about 1½ tablespoons)
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon paprika
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Pat chicken breasts dry with paper towels.
  2. Place chicken between plastic wrap and pound to an even ¾-inch thickness. Season both sides with salt and pepper.
  3. In a small bowl, combine softened butter, minced garlic, Italian herbs, salt, pepper, and paprika until well mixed.
  4. Heat an oven-safe skillet over medium-high heat and add olive oil. Sear chicken breasts for 2-3 minutes per side until golden brown.
  5. Remove skillet from heat. Spread the garlic butter mixture evenly over each chicken breast.
  6. Transfer skillet to preheated oven and bake for 12-15 minutes, or until internal temperature reaches 165°F (74°C).
  7. Remove from oven and let rest for 5 minutes. Drizzle with fresh lemon juice and garnish with chopped parsley if desired.
  8. Serve hot, spooning the melted garlic butter sauce from the pan over the chicken.
