Frito Corn Salad Recipe

This Frito Corn Salad is the ultimate no-cook side dish for summer gatherings – sweet, crunchy, and perfectly portable for your next potluck or BBQ!


Ingredients

  • 2 (15 oz) cans corn kernels, drained
  • 1 red bell pepper, finely diced
  • 1/2 red onion, finely diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon ranch seasoning mix
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups Fritos Original Corn Chips
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Drain the corn kernels thoroughly and place in a large mixing bowl.
  2. Add the diced red bell pepper, red onion, and halved cherry tomatoes to the bowl with the corn.
  3. In a separate bowl, combine mayonnaise, sour cream, ranch seasoning, garlic powder, and paprika. Stir until well mixed.
  4. Pour the dressing over the corn mixture and stir gently to coat all ingredients.
  5. Add the shredded cheddar cheese and mix again.
  6. Cover and refrigerate for at least 30 minutes to allow flavors to blend.
  7. Just before serving, fold in the Fritos corn chips.
  8. Garnish with chopped cilantro if desired and serve immediately.
