Ingredients

- 2 tbsp olive oil (extra virgin)
- 3 garlic cloves (minced)
- 2 red peppers (sliced)
- 1 small yellow onion (sliced)
- 4 Italian sausage links (cut into bite sized pieces)
- 1½ cups orzo
- 3½ cups chicken stock (low sodium)
- 1 cup mozzarella (shredded)
- Parmesan (optional to garnish)
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp dried oregano
- Handful fresh basil
Instructions
- Step 1: Begin by preparing the garlic, red peppers, and onions.Set aside until ready to use.
- Step 2: Remove the casings from the Italian sausage and chop into bite sized pieces. Set aside until ready to use.
- Step 3: To a large frying pan set to medium heat, add the olive oil. Add the red peppers and onions and cook for 2-3 minutes, just until sofened.
- Step 4: Add the garlic and spices and sauté for an additional minute.Sammys tip: if you are using a salted chicken stock, skip the added salt.
- Step 5: Add the chopped Italian sausage and fry for 3 to 4 minutes just until the sausage begins to brown.
- Step 6: Add the orzo and allow it to toast in the pan for a minute before adding the chicken stock.
- Step 7: Add the chicken stock and a handful of fresh basil.
- Step 8: Reduce heat to low/simmer, cover and let cook for 15-20 minutes, or until the orzo is cooked and the majority of the chicken stock has been absorbed.Remove the lid during the last 5 minutes of cook time.Sammy’s tip: stir every 5 minutes or so to ensure the orzo doesn’t stick to the bottom of the pan.
- Step 9: Once the orzo is cooked and the stock has been absorbed, add the shredded cheese and mix until melted.Taste here to see if you need to add more salt.
- Step 10: Garnish with parmesan cheese and enjoy right away.
