Ingredients

  • 2 tbsp olive oil (extra virgin)
  • 3 garlic cloves (minced)
  • 2 red peppers (sliced)
  • 1 small yellow onion (sliced)
  • 4 Italian sausage links (cut into bite sized pieces)
  • 1½ cups orzo
  • 3½ cups chicken stock (low sodium)
  • 1 cup mozzarella (shredded)
  • Parmesan (optional to garnish)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp dried oregano
  • Handful fresh basil

Instructions

  1. Step 1: Begin by preparing the garlic, red peppers, and onions.Set aside until ready to use.
  2. Step 2: Remove the casings from the Italian sausage and chop into bite sized pieces. Set aside until ready to use.
  3. Step 3: To a large frying pan set to medium heat, add the olive oil. Add the red peppers and onions and cook for 2-3 minutes, just until sofened.
  4. Step 4: Add the garlic and spices and sauté for an additional minute.Sammys tip: if you are using a salted chicken stock, skip the added salt.
  5. Step 5: Add the chopped Italian sausage and fry for 3 to 4 minutes just until the sausage begins to brown.
  6. Step 6: Add the orzo and allow it to toast in the pan for a minute before adding the chicken stock.
  7. Step 7: Add the chicken stock and a handful of fresh basil.
  8. Step 8: Reduce heat to low/simmer, cover and let cook for 15-20 minutes, or until the orzo is cooked and the majority of the chicken stock has been absorbed.Remove the lid during the last 5 minutes of cook time.Sammy’s tip: stir every 5 minutes or so to ensure the orzo doesn’t stick to the bottom of the pan.
  9. Step 9: Once the orzo is cooked and the stock has been absorbed, add the shredded cheese and mix until melted.Taste here to see if you need to add more salt.
  10. Step 10: Garnish with parmesan cheese and enjoy right away.
