French Onion Rice

  • 2 cups (400g) long-grain white rice, rinsed and drained
  • 3 large yellow onions (about 1.5 pounds/680g), thinly sliced
  • 4 tablespoons (56g) unsalted butter
  • 2 tablespoons (30ml) olive oil
  • 4 cups (946ml) beef broth, preferably low-sodium
  • 2 tablespoons (30ml) Worcestershire sauce
  • 2 bay leaves
  • 4 sprigs fresh thyme (or 1 teaspoon dried thyme)
  • 2 cloves garlic, minced
  • 1 tablespoon (15g) brown sugar
  • 1½ cups (170g) Gruyère cheese, shredded
  • ½ cup (50g) Parmesan cheese, freshly grated
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

  1. Heat butter and olive oil in a large Dutch oven over medium heat. Add sliced onions and a pinch of salt, and cook for 5 minutes until softened.
