- 2 cups (400g) long-grain white rice, rinsed and drained
- 3 large yellow onions (about 1.5 pounds/680g), thinly sliced
- 4 tablespoons (56g) unsalted butter
- 2 tablespoons (30ml) olive oil
- 4 cups (946ml) beef broth, preferably low-sodium
- 2 tablespoons (30ml) Worcestershire sauce
- 2 bay leaves
- 4 sprigs fresh thyme (or 1 teaspoon dried thyme)
- 2 cloves garlic, minced
- 1 tablespoon (15g) brown sugar
- 1½ cups (170g) Gruyère cheese, shredded
- ½ cup (50g) Parmesan cheese, freshly grated
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
